These Bettona Boyfriend Pants from Athleta have quickly become one of my favorite things in my closet! After a day of teaching, I love to come home and throw on something comfy but cute to relax in. I have been getting tired of leggings and yoga pants, and have been looking for months for something different. These pants are adorable on and look great with tennis shoes or flip flops. What I love most is the draw string on the bottom so they can cinch, making you able to wear them as pants or as capris. I can't say enough about these new favorites!

Homemade Pina Coladas {Food}

P and I fell in love with the rich, creamy pineapple and coconut taste of homemade pina coladas on our recent trip to the British Virgin Islands. With summer approaching quickly here in Minnesota, we are excited to make this new favorite for friends and family on those warm nights entertaining in the backyard. This recipe is quick and easy, and the taste far surpasses buying a pre-made mix. Happy summer entertaining!

: : Ingredients : : 

Rum, fresh pineapple juice, cream of coconut, heavy cream, fresh pineapple slices (optional). 

: : Recipe : : 

Combine 2 ounces of rum, 4 ounces fresh pineapple juice, 2 ounces cream of coconut, and 1 ounce heavy cream in your blender. Pulse until thoroughly mixed. 

Add in 4 cups of ice and blend until smooth.

Pour into two glasses. Top off with a fresh pineapple slice and pour a bit of rum on top.

Lots of Dots

Crisp button downs have always been a staple in my wardrobe. I love the way you can throw one on with a pair of jeans or even leggings and have a wonderfully put together look that is utterly effortless. J. Spring Midi-Skirt

I adore a good midi-skirt. They are sweet but fashion forward, and can transition easily from day to night. I am a bit on the short side, 5'4''. While this doesn't affect my ability to wear most things, there are some trends that don't always suit me. However, I just knew I had to make the make the midi-skirt work! I discovered that with my short frame, I needed a skirt that hit just below my knee; with anything longer than that, I was getting lost. For me I like to pair my midi-skirt with a great pair of heels. And I love the simplicity of the white tee in contrast to the feminine and ornate skirt!

Crop Top

Last summer I caved and purchased a crop top, it was on sale and quite frankly I couldn't resist the bow adoring the front of the top. Although, still cautious of this trend I played it safe by paring it with a high waist skirt, last seen here. The high waist skirt keeps my look flattering yet still a little flirty. Favorite Things Friday

One of my favorite accessories to decorate with is a pretty tray. I seriously cannot get enough of the lacquer trays from West Elm. They are modern yet classic and come in a wide variety of colors making the decorating possibilities endless. I love the way the clean white tray has cleaned up my coffee table display and how the smaller rectangle tray has become a perfect catch all for B's wallet, keys, and other miscellaneous items. Stay tuned for how I plan to use these trays to help with my jewelry organization.

Fresh Poke {Food}

P and I just got back from a wonderful vacation to the British Virgin Islands. While away we enjoyed fresh fish, homemade guacamole, and pina coladas almost nightly it seemed. As we have transitioned back this week we decided to enjoy some of our vacation favorites together here in Minnesota. 

Poke is a traditionally served as an appetizer, made from sushi grade ahi tuna and other fresh ingredients. However, my husband and I enjoy this as a lighter and very healthy dinner option, served with our favorite guacamole and chips (recipe coming soon to the blog). It is an extremely easy recipe and takes about 10 minutes to prepare, which makes it perfect for a week night. I hope that you will enjoy this recipe as much as we do. It has us dreaming of gorgeous, warm summer nights here in MN. 

: : Ingredients : : 

1 pound sushi grade ahi tuna (we get ours from Coastal Seafood), green onion, fresh cilantro, Sriracha, soy sauce, and extra virgin olive oil. 

: : Recipe : : 

Slice the tuna using a sharp knife in 1/2 inch strips. Then slice the strips into small cubes. Place in a mixing bowl. 

Finely chop three green onions and add to the tuna. 

Finely chop 2 tablespoons of fresh cilantro and add to the poke mixture. 

Next, add the following: 1 tablespoon Sriracha, 2 tablespoons soy sauce, and 1 tablespoon extra virgin olive oil. 

Stir all of the ingredients together and enjoy!
