Hello Winter

Winter is officially here in Minneapolis and I am not quite ready for it. I love the snow, but the extreme cold temperatures are hard to get excited about. But I am looking forward to relaxing nights studying and watching movies by the fire. Creating fun and warm outfits is more challenging at this time of year, but I am excited for comfy knits, wool skirts, and boots. Here's to the next four months of cold and snow!

All Wrapped Up

I've been in denial that winter is coming, although its been sunny here in Seattle there is definitely a chill in the air that calls for more then just a light jacket. This season I have been all about the oversize scarf/shawl I think they bring a hint of elegance to a look and I'm obsessed with this beauty from Topshop. I have also officially broken out my Swedish clogs - circa my Swedish Choir days. I've have had a surprising amount of admirers that are loving the clog look and I could not be more thrilled. What are some of your favorite fall pieces?

How to Cook Roasted Butternut Squash {Food}

Butternut squash is something that I have been dying to prepare and cook myself, as opposed to buying pre-cut butternut squash chunks from Whole Foods or Lunds. Not only is that more expensive, but I love learning how to do things myself. I have been a bit intimidated by butternut squash in the past, but this fall I decided to tackle it. The result was delicious, roasted, savory squash in bite-size pieces, with a little crunch on the outside! P and I can't get enough of this easy and healthy side dish! It would be a perfect addition to your Thanksgiving table as well. Happy cooking!

:: Ingredients ::

1 medium butternut squash (about 2 pounds)
Extra-virgin olive oil
Salt and pepper

:: Recipe ::

Preheat your oven to 400 degrees.

Halve the squash lengthwise. Using a spoon, empty out the the pulp and seeds.

Cut the squash into chunks (about 1 inch cubes), carefully cutting away the outside skin.

Transfer the cubes to a large, rimmed baking sheet. Toss with olive oil, salt, and pepper. Lay out in a single layer.

Roast, tossing occasionally, for 30 minutes.

With Love,
A

Orcas Island - Weekend Getaway {Lifestyle}

Long weekends are the best especially when spent on Orcas Island with good friends! Its such a treat to get out of the city and truly unwind and relax - that is exactly what we did while taking in the beautiful scenery all around the island. I'm excited to share some snap shots of our mini vacation and I even included a fun video at the end. Let me know what you think! If you ever decide to visit WA Orcas is a must!
