Swedish Kringle {Food}

Angela and I have grown up in a family that embraces our Swedish roots. The pride in our heritage becomes even more apparent around the holidays as our decorations and food preferences tend to encompass all things Scandinavian. A holiday treat that became very special to me during out annual trip to the American Swedish Institute was Swedish Kringle. It was apart of a selection of many wonderful treats but year after year I would continue to select the Kringle. I'm so excited to be sharing the recipe with you today, it's the first time I've attempted the pastry on my own. I was relieved to find an easy to follow recipe that did not disappoint.  

I followed the recipe in Scandinavian Classic Baking by Pat Sinclair. I highly recommend, its a beautiful book and each recipe looks delicious. 

| Makes 2, 10 servings each |

Crust

1 cup all-purpose flour | 1/2 cold cup unsalted butter | 1 tablespoon water

Heat the oven to 350 degrees. Make the crust. Place the flour and the butter in the bowl of a food processor. Pulse until mixture resembles coarse crumbs with some pea-sized pieces. With the machine running add the water and process until dough is formed. Put dough on a lightly floured surface and shape into a ball. Divide the dough in half. Press each half into a strip about 3" wide and 10" long on an ungreased baking sheet. 


Topping

1 cup water | 1/2 cup unsalted butter | 1 cup all purpose flour | 3 large eggs, room temp | 1 teaspoon almond extract 

Make the topping. Heat the water and the butter in a medium saucepan over medium-high heat until the butter is melted and the liquid is boiling. All the flour all at once and whisk until a thick paste forms (this happens quickly!) and leaves the sides of the pan. Cook about a minute longer, stirring constantly to evaporate excess moisture. Remove from the heat and let cool at least 5 minutes (I cooled for over 10 min) to prevent the eggs from cooking when you add them.
Using a hand mixer or whisk beat in the eggs, one at a time, beating well after each egg. Each egg should be completely mixed in before the next is added. Stir in the almond extract.
Spread over the pastry strips, spreading almost to the edge. Bake 50-60 minutes or until puffed and golden brown. Cool on wire cooling rack. As the pastry cools, it will collapse. Cool completely.


 Frosting

2 cups powdered sugar | 1 tablespoon butter, softened | 1 teaspoon almond extract | 3 tablespoons heavy whipping cream or whole milk

Make the frosting. Mix powdered sugar, butter, almond extract, and 2 tablespoons whipping cream until smooth. Add more whipping cream if needed for spreading consistency. Spread over pastry and cut into slices before serving.

Old Fashion Christmas


Happy Holiday! I hope you had a wonderful weekend- mine was spent relaxing, baking and wrapping presents.

A midi skirt screams holiday party wear if you ask me! I love wearing a big ballgown its so wonderfully fancy. Pairing the skirt with a tartan button down balances out the big ballgown skirt. This look is perfect for Christmas Eve festivities or a Holiday work event.

Favorite Things Friday


I have a growing obsession with succulents, air-plants, and small cacti! I love the way you can style them on a coffee table or use them as the center piece on your dinning room table. A few other things that qualify these cheerful plants as one of my favorite things is one, the fact that they are super easy to maintain {aka: really hard to kill}. Secondly,  they are an affordable decoration that really livens up any area of your living space. Lastly, its a good excuse to purchase fun planters and plant stands! I'm obsessed with these copper planters and these cool plant stands.

Homemade Pizza, Grandma-Pie Style


P and I love pizza, it is one of our favorite foods! So when my sister recently shared this recipe with me from Bon Appetit (a fabulous magazine, you should ask for it for Christmas if you don't already get it monthly) we were so excited to try it out. This old-school pizza is hands down the most delicious pizza I have ever made at home...seriously!  Making the crust the night before and having the ability to make the sauce and prepare ingredients ahead of time make this the perfect dish to share at your next cocktail or holiday party, or for a fun weeknight in. I have learned that having amazing crust is the ticket from taking good pizza to incredible pizza, along with homemade sauce, fresh ingredients, and high cooking temperature. We used one pound of italian sausage, red onions, and mozzarella for our toppings, but the options are endless. Happy entertaining everyone!

Plaid on Plaid



I finally found a blanket scarf that I am in love with! This find from J.Crew looks great belted with any top you like underneath, or as a wrap with a festive holiday dress. It is so warm and comfortable, while adding that extra bit of "fashion forward" to your ensemble. I love the versatility of this piece and how easy it would transition from day to evening - think black sparkly tank, or a fun wool mini skirt. Merry Christmas everyone!

Time To Shine


Happy December! Snow has a way of making it really feel like Christmas time, we woke up to a light dusting on Saturday morning and immediately turned on the coffee and started the Christmas music- needless to say out apartment is officially ready for the Holiday!

First things first, I found this Diane von Furstenberg dress at Nordstrom Rack at the end of the season for $10. Ever since I've been patiently waiting to pull it out for the Holidays! I decided to go all out and paired it with my red coat and heels for an ultra festive look. I typically like to have just one statement piece but when it comes to Holiday dressing anything you are feeling goes... its more fun that way. Stay tuned for more festive looks!
