P and I fell in love with the rich, creamy pineapple and coconut taste of homemade pina coladas on our recent trip to the British Virgin Islands. With summer approaching quickly here in Minnesota, we are excited to make this new favorite for friends and family on those warm nights entertaining in the backyard. This recipe is quick and easy, and the taste far surpasses buying a pre-made mix. Happy summer entertaining!

Rum, fresh pineapple juice, cream of coconut, heavy cream, fresh pineapple slices (optional).

Combine 2 ounces of rum, 4 ounces fresh pineapple juice, 2 ounces cream of coconut, and 1 ounce heavy cream in your blender. Pulse until thoroughly mixed.
Add in 4 cups of ice and blend until smooth.
Pour into two glasses. Top off with a fresh pineapple slice and pour a bit of rum on top.
